Introduction
This is a recipe that I adapted from another site. Originally, the recipe called for 6 tbls of olive oil. This is a much lower calorie Kofta. It is very tasty. I served with apple raita but listed the recipe separate because it has more than 6 servings. Topped with a little fat free or regular feta and you've got a tasty dinner. Ingredients
-
turkey:
2 tbls. olive oil
3 tbls. tomato paste
1 small sweet onion, red or white, finely grated, squeezed dry
3 cloves garlic finely chopped
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp allspice
1/4 tsp cayenne powder
salt
pepper
1 1/2 lbs ground turkey
1/4 cup chopped flat leaf parsley
Salad:
2 cups baby spinach
2 tbls lemon juice
1 tbls olive oil
salt
pepper
flat out flatbread or flat bread of your choice
Tips
WW points+ value is 13 points. A serving is 2 wraps. If you want to cut down on points and only have 1 wrap, the points+ value goes down to 7. You could also cut back on the oil used in the turkey mixture, but you only save 1 point on the meal and the turkey benefits from the added moisture.
Directions
whisk together the tomato paste, 2 tbls olive oil, onion, garlic, cumin, cinnamon, allspice, cayenne, salt and pepper. Add the turkey and chopped parsley. Combine well, but be careful not to work the meat too much. Place the meat mixture in the fridge, covered, for at least 1 hour or overnight.
Roll the meat into 12 even balls and press to flatten slightly. Spray your skillet and each patty with a little nonstick spray and cook for about 3-4 minutes on each side.
in separate bowl toss the spinach with 1 tbls olive oil, lemon juice, salt and pepper.
Warm the flat bread slightly and break up 1 of the kofte patties patties on the bread. Top with the apple raita and the spinach salad.
