Ingredients

    1 portabella mushroom, 4-5" in diameter
    1/2 T olive oil
    3 T bottled marinara/other tomato-based sauce
    3 T shredded fat free mozzarella
    1 tsp reduced fat grated parmesan
    fresh basil, if you have it
    black pepper and salt to taste

Directions

Preheat oven to 425. If mushroom has a stem, slice it off close to the cap (reserve for soups or sauces). Brush the cap with olive oil and place stem side up on a rimmed baking sheet or pan. Sprinkle light;y with salt and pepper. Spread 3 T of spaghetti sauce on each cap and top each with 3 T of mozzarella cheese. Sprinkly with fresh basil and/or parmesan cheese. Bake 15 minutes, or until the mushrooms are hot and the cheese is lightly browned.
