Ingredients

    4 eggs, medium size
    2 tbsp milk
    1 tin (140 grams) tuna in brine, drained
    1 medium red bell pepper, sliced or chopped
    1 cup leeks, sliced thinly
    0.5 cup tomatoes, sliced
    salt and pepper to taste
    thyme

Directions

Whisk eggs and milk, add tuna, leeks and bell pepper. Place tomato slices on top and sprinkle with thyme. Fry in nonstick pan until solidified (or bake in oven for fat-free cooking method - cooking time will be longer). Season to taste. Transfer to plate.

Serving suggestion: Sprinkle feta cubes on top for some more protein, but be aware that this also adds fat.
