Number of Servings: 9

Ingredients

    10 oz uncooked whole wheat shell macaroni
    1 Tbsp unsalted butter
    1 Tbsp all-purpose flour
    2 cup 1% milk
    2 cup onion, chopped fine
    1/2 tsp paprika
    2 bay leaves
    12 oz low-fat shredded cheddar cheese
    1 oz Parmigiano Reggiano finely shredded (or grated parmesan cheese)
    black pepper
    salt

Directions

1. Boil macaroni (6 minutes for al denti)
2. Melt butter in a medium saucepan over medium-low heat
3. Slowly add flour, whisk for about 3 minutes
4. Slowly whisk milk into the flour and butter
5. Stir in onion, paprika and bay leaf
6. Simmer for 15 minutes, stirring frequently
7. Remove from heat
8. Stir in 5 oz of cheese to saucepan and season to taste with salt and pepper
9. Stir in macaroni to coat with cheese
10. Add half of cheese macaroni into a 8x13 baking dish (sprayed with cooking spray)
11. Add remaining cheese to top of macaroni
12. Add remaining cheese macaroni
13. Sprinkle with Parmigiano Reggiano cheese
14. Bake in 350 degree oven for 30 minutes
15. Let cool about 8-10 minutes and slice into 9 squares

    O.K.
    Just okay...I thought it needed more flavor. After taste testing I added more seasonings (paprika, season salt) & topped it with lightly buttered bread crumbs but it still didn't do the trick :( - 10/26/11
