Ingredients

    4 whole large eggs
    2 large egg whites
    1/4 to 1/2 cup nonfat cottage cheese
    2 cups sliced mushrooms
    5 to 7 fresh asparagus, cut into pieces, leaving tips whole
    1/2 cup shredded swiss cheese
    skim milk
    salt, pepper, and other seasoings to taste

Directions

Preheat oven to 350.

In a medium saucepan, sautee mushrooms and asparagus over low-medium heat until just tender.

Meanwhile, in a medium bowl, whisk together eggs, egg whites, cottage cheese, skim milk, salt pepper, and other seasonings to taste.

In a 9-inch pie pan sprayed liberally with nonstick cooking spray, place the cooked vegetables. Pour egg mixture over the veggies and stir around in the pan to mix together. Add shredded cheese to the top.

Cover with tin foil and bake at 350F for 30-40 minutes, until set. Uncover and broil for 2 to 3 minutes until top is browned.
