A fresh and flavorful salad with lots of crunch and spice. Calories are for 8 1 1/2-cup side servings. Double the calories for 4 HUGE main course salads. Ingredients

    1 head of lettuce (I use 1/2 Iceberg Lettuce and 1/2 Red leaf)
    1 c Yellow Sweet Corn kernels (frozen-will thaw in salad)
    1/2 c Celery, diced
    1 c Black Beans (canned, drained)
    1/2 c Mexican Blend Cheese
    1/2 c green onion
    4 Tbs sliced Black Olives, canned
    2 oz. Organic Tortilla Chips-broken into bite size pieces.
    8 Tbs Naturally Fresh Jalapeno Ranch Dressing

Directions

Chopped the lettuce(s). Layer the remaining ingredients on top. Add tortilla chips and toss with dressing before serving. Serves 4 huge main course salads or 8-10 small side salads.

May add cilantro and avocado with dressing if desired.
Add chicken, salmon, tuna or other meat if desired as well.
