Ingredients

    300 grams rolled oats (1.305 cup)
    3 scoops vanilla protein powder
    cinnamon
    nutmeg
    ginger
    4 egg whites
    2 TBSP peanut butter
    250 grams canned pumpkin (1.087 cup)
    1 tsp vanilla, almond or hazelnut extract

Directions

Mix all dry ingredients together. Mix peanut butter into the pumpkin. Add peanut butter and pumpkin mix, egg whites and extract to the dry mix. If the mix is really dry you can add an extra egg white or a splash of low fat/skim milk. Spread into an 8x8 cake pan. I recommend using greased parchment paper for easy clean up.

Bake 18-20 minutes at 350.

Allow to cool. Cut into 8 bars. Store wrapped in teh fridge (keeps 2-3 weeks).

You can also double this recipe and use a 13x9 pan.
