Introduction

i tweaked a recipe from the "eat clean" book by tasca reno, i changed the flour...and used lighter bake oil replacement for half the fat...these are chewy and light when you want a healthy sweet cookie.
(if you dont have sunsweet lighter bake you can use applesauce)

Ingredients

    1/2 c. whole flax seeds
    1-1/2 c. skim milk w. 1T. lemon juice (or just use buttermilk)
    2c. flour
    1/2 c flax seeds (ground)
    1c. rolled oats
    1tsp baking powder
    1tsp baking soda
    1/2 tsp sea salt
    1/4 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp mace
    1/4 tsp cloves
    1/4c. butter
    1/4c. olive oil
    1/2c. "sunsweet lighter bake"
    1c. sugar
    2 large eggs
    2 tbsp vanilla
    2c. raw almonds chopped
    1/2c. raisins


Directions

1.Preheat oven to 375'. In a small bowl, soak 1/2c. flax seeds in milk and lemon juice (or buttermilk). soak 2 hrs. or so.
2.in a large bowl mix dry ingredients and blend. dont add raisins or nuts yet.
3. in another bowl beat olive oil, butter, sunsweet lighter bake, sugar, eggs and vanilla.
4. combine liquid and dry ingredients until evenly blended...add raisins and chopped almonds.
5. pam spray cookie sheet...scoop spoonfulls on cookiesheet and bake for 15min.
