Ingredients

8 oz Barilla or other Penne Pasta
1 pint of cherry or grape tomatoes, washed and cut in half
8 oz fresh mozzarella cheese, cubed
6-8 large fresh basil leaves, finely sliced
2 T finely minced red onion
1 clove garlic, finely minced
2 T balsamic vinegar
sea salt to taste and freshly ground pepper
Directions
Boil water and cook pasta, al dente, if preferred.
Drain and rinse with cool water. While this is cooking, Wash and cut tomatoes, basil, onions, garlic, fresh mozzarella, and combine in serving dish. Add salt and pepper to taste. Add pasta when cooked, toss and add balsamic vinegar. Optional: top with a decorative swirling of balsamic glaze.
