    * *Flour, white, 3.5-4 cups(remove)
    * Yeast, dried, 1tsp
    * Salt, 1 tsp (remove)
    * Water, tap, 1.5 cup (8 fl oz) (remove)


Water (lukewarm) + 1tsp dried yeast + 2 cups flour. Stir, cover, then leave for min 1hour (longer is better). Add remaining flour and salt, knead for 10 min. Allow 1.5-2hrs to double in size. punch dough, leave another 10 min. roll out to about 25 cm diameter and cook 1 by 1on hot skillet or on pizza stone in oven until bubbles have formed. stack the flatbreads as they are cooked and cover the pile with damp tea-towel to keep them soft. delicious with grilled meat and veg! makes 8
