Ingredients

1 pkg whole wheat pasta (rotini)
1/2 pkg feta cheese
1 summer squash
1 bell pepper
1 pkg cherry tomatoes
1 onion
2 cloves garlic
1 broccoli bunch (florets cut off stalk)
Olive OIl
Salt
Pepper
Directions
Boil water for pasta, cook as per instructions and set to the side to cool. (If in a time crunch, run cool water over the pasta).
Chop the vegetables into bite-size peices (except cloves, leave whole in shell), lay flat on a cookie sheet (with rims), sprinkle with olive oil (approx. 1 T) and italian seasoning, and put in the oven at 400 degrees for 20 minutes or until the vegetables start to brown on the edges. Take out of the oven and set to the side to cool for at least 10 minutes.
Combine vegetables and pasta in a large bowl, toss with crumbled feta cheese, salt, pepper, and more olive oil (if necessary). Add white beans or tuna for a light protein addition, and voila!
