Ingredients

    2 Large very ripe bananas
    1 egg
    3 Tbsp low fat natural yogurt
    2 Tbsp honey
    2 Tbsp maple syrup (optional)
    1 tsp vanilla essence
    225g plain flour (or if using Self-raising flour, leave out baking powder)
    3 tsp baking powder
    50g chopped mixed nuts - I use peanuts, almonds & walnuts but you can use any, or leave them out.

Directions

Dump banana, egg, yogurt, honey, maple syrup & vanilla essence into a bowl, mash/blend until smooth & well mixed.
Sift flour into bowl, add nuts, stir to combine.
Put into lined loaf tin, bake at 180 C / 350 F for 50-60 mins.

Makes approx 750gram loaf which is approx 15 50g slices. Slice loaf when cool, wrap individual slices & freeze.
