Introduction

Ingredients

    2 T Mrs. Dash (Original)
    3 T olive oil
    2 T cider vinegar
    1/4 c orange juice
    1 T dijon mustard
    1 T honey
    1/4 c chicken stock (I buy the reduced sodium/fat free & it turned out just fine)
    3 c cooked chicken
    11 oz can of mandarin oranges, drained
    1/3 c toasted sliced almonds
    1 c spinach (I used a lot more)

Directions

1. For dressing, combine oil, vinegar, OJ, Mrs. Dash, mustard & honey in jar with tight-fitting lid.
2. Cover & shake to mix well.
3. Combine stock with chicken in medium bowl.
4. Pour dressing over chicken mixture; toss to mix well.
5. Cover and chill 3-4 hours or overnight.
6. Add orange segments, almonds & spinach; toss gently before serving.
