Introduction

Number of Servings: 6

Ingredients

    3/4 lb pork chops ( steaks, ceter cut its your choice)
    1 cup rice
    1/2 cup vidalia onion choped
    1/2 cup green bell pepper choped
    1/2 cup yellow bell pepper choped
    2 medium banana peppers diced
    1/4 cup mushrooms (how ever you like them)
    6 tsp your favorite (low sodium) taco sesoning
    4 slices of your favorite 2% american Cheese
    1Tbs country crock spread
    1Tbs olive Oil


Directions

In a large nonstick skillet melt country crock and add olive oil. Trim fat and any bones from pork. Cut it to bite size pieces. Season to your taste. Add pork to skillet cooking about 3 minutes on each side to brown. You don’t want to cook it completely because it will cook more later on. Once pork is brown remove from skillet. To skillet and onions, all the peppers, and the mushrooms. Cook about 5 minutes browning, slightly. Add rice stirring to brown slightly. Add about 1 1/2 cup water and taco seasoning. Stirring to blend well. Once this reaches a boil add the pork. Stirring to mix everything well. Reduce heat to simmer. Stirs occasionally add more water as need. You don’t want it very soupy
. Once rice is done and most of the liquid has evaporated turn heat off. Place the slice of cheese on top of mixture. Let set for a few minutes until cheese is melted. Makes 6 3/4 cup servings.
