Introduction

Ingredients

    1&1/2 lb chicken breast - no skin
    2- 14 oz cans rotel tomatoes
    1- 4 oz can tomato sauce - low sodium
    1 block low fat or fat free cream cheese
    8 oz. low fat sour cream
    8oz wide egg noodles
    6 green onions chopped - tops and bottoms

Directions

Grill chicken, cool and then shred. Put shredded chicken, rotel, and tomato sauce into a medium/large sauce pan and simmer over medium low heat 20 minutes. Meanwhile, cook pasta as directed. Drain pasta. Mix pasta, cream cheese, sour cream and green onion together. Layer in casserole dish, starting with meat and ending with pasta mixture. Bake at 350 degrees 30 minutes. Enjoy!
