Ingredients

    1 cup white (all purpose) flour
    1/2 cup whole wheat flour
    1/2 cup rolled oats
    3/4 cup milk
    1/4 cup greek yogurt
    1 egg
    1/2 cup brown sugar
    3 teasponns baking powder
    1/2 cup unsweetened shredded toasted coconut
    1/2 cup shredded carrots
    1/2 cup drained crushed pineapple
    1 1/2 teasponns pumkin pie spice

Directions

mix all wet ingredients together in one bowl and all dry ingredients in another bowl. then stir wet into dry mix and blend untill just moist. scoop into paper liners in a muffin pan filling each cup 2/3 full. bake at 400 degrees for 20 min.
