Ingredients

    Pie Crust:
    1 c. flour
    .4 cup shortening
    1/2 tsp. salt
    2-3 Tbsp cold water

    Filling:
    1.5 c. sliced zucchini
    sun dried tomatoes
    1 oz of sliced kalamata olives (pitted)
    1/4 c. shredded mozarella
    1/4 c. shredded cheddar
    1/2 c. feta
    4 large eggs

Directions

Make pie crust by combining the pie ingredients and rolling into tin.
Add filling ingredients and put on half of cheese and then pour on 4 beaten eggs. Then, add rest of cheese on top. Bake at 375 degrees for 30-45 minutes (until filling is set up). Makes 4 large portions or 6 smaller portions.
