Ingredients

1 lb. ground chicken
3 T. vegetable oil
1 sm. red onion, finely chopped
3 T. grated ginger
2 red Thai or jalapeno chilis, seeded and chopped
Small bunch cilantro, chopped
Green onions sliced lengthwise, for garnish
Bean sprouts, for garnish
Whole Bibb lettuce leaves, separated OR
Spring roll wrappers
DRESSING:
4 T. lime juice
4 T. lemon juice
3 T. fish sauce
3 T. brown sugar
1 garlic clove, chopped
Directions
Brown chicken in vegetable oil, breaking up thoroughly. Transfer to a bowl. Add onion, ginger, and chilis, and toss well.
Combine all dressing ingredients in small bowl and whisk. Toss the chicken with the dressing and sprinkle cilantro over.
Spoon onto whole Bibb lettuce leaf and top with green onions or sprouts as desired. Roll up and eat.
