Introduction

A quick and easy dinner idea for busy evenings. Can use tortilla chips to replace the taco shells if none are on hand. A quick and easy dinner idea for busy evenings. Can use tortilla chips to replace the taco shells if none are on hand.

Ingredients

    1 package (7 ounces) pasta shells, cooked and drained
    1 small red pepper, chopped
    3 green onions (shallots), chopped
    1/2 cup cherry tomatoes, chopped
    1 can (19 ounces) black beans, rinsed and drained
    1 cup Tostitos Salsa Con Queso
    1 Tbsp skim milk
    2 crushed taco shells
    1/2 cup shredded tex mex cheese

Directions

In a large bowl, combine peppers, shallots, tomatoes, macaroni and beans. Add the cheese sauce and milk; stir until blended.

Transfer to a greased 2-1/2 qt square baking dish. Cover and bake at 350 for 25 minutes. Uncover; sprinkle with taco shells and cheese. Bake 5-10 minutes longer or until pasta is tender and cheese is melted.

Makes 7 1 cup servings.
