Ingredients

3 tbsp butter
1/2 oz bittersweet chocolate, chopped
1/3 cup brown sugar
1 egg replacer (such as Ener-G), prepared
1/3 cup Dutch-process cocoa
2.2 oz mochiko (glutinous rice flour)
1/2 tsp baking powder
7 tbsp rice milk
1/2 tsp vanilla
Directions
Preheat oven to 350F, grease 12 mini-muffin cups.
Melt butter and chocolate gently in a large bowl.
Add sugar and egg replacer and whisk until everything is thoroughly incorporated.
In another bowl, whisk together cocoa, mochiko and baking powder.
Stir half the dry mixture into the sugar mixture, then add rice mik and vanilla, stirring well.
Beat in the remaining dry ingredients until no pockets of dry mix remain.
Bake 18 minutes. Cool in the tin for 5 minutes before unmoulding onto a wire rack.
