Ingredients

    1 cup iceberg lettuce, shredded or chopped
    1/2 cucumber, with peel, sliced thinly
    1 med red tomato, cut into 4 wedges
    1 tbsp parmesan cheese
    1 tsp honey mustard dressing
    1/2 grilled or roasted chicken breast, bone and skin removed (or use leftovers)

Directions

1. Mix all vegetables together.
2. Top with grilled or leftover chicken, parmesan cheese, and honey mustard dressing. Lightly toss.

Makes 1 or 2 (if used as side dish) servings.
