Ingredients

    1 lb - Tyson boneless, skinless chicken breast (about 4 0z each)
    1/2 cup - Fat Free Cream Cheese
    1 Tbsp - Kroger Zesty Blend Garlic and Herb Seasoning
    1 cup - chopped fresh spinach
    8 slices - Louis Rich Turkey Bacon
    1 extra large egg
    1 Tbsp - dehydrated onion

Directions

Preheat oven to 400 degrees F. Spray 8 x 8 glass baking dish with cooking spray.

Pound each chicken breast (between plastic wrap) until approximately 1/2 inch thick.

In a medium mixing bowl, whip cream cheese, egg and Garlic and Herb seasoning until light and fluffy. Fold in chopped spinach until mixed evenly.

Spread each pounded chicken breast with equal amounts of cream cheese mixture. Roll each chicken breast jellyroll style and wrap in aluminum foil. Place rolled chicken breasts in the freezer for 45 minutes to an hour to firm up the cream cheese mixture (this can probably be done in the refrigerator overnight as well).

Wrap each rolled chicken breast with 2 turkey bacon slices and place each chicken roll, seam down, in the baking pan.

Bake chicken rolls covered with aluminum foil for 35 minutes (or until juices run clear). Remove foil and bake another 15 minutes to brown the bacon.

If you like, you could turn oven up to broil and place baking dish under the broiler for 5 - 6 minutes to crisp the bacon.

    This was super easy and both my husband and I loved it! I didn't use the onion flakes and I also didn't put the rolls in the freezer, I just rolled up and baked for 30 min covered then 15 min uncovered. Served with couscous and asparagus, great yummy dinner and will be a staple at our house! - 7/14/10
