    2 cups lo sodium chicken stock
    1 cup beef stock
    1 pkg. fresh Udon noodles (7oz. pkg.)
    .5 tsp. fresh ginger (grated)
    2 medium scallions sliced thinly
    .5 tsp. garlic powder
    .5 tsp. onion powder
    1/3 red chile pepper (small thai red pepper) (minced)
    .25 jullienned carrots
    .5 tsp. sea salt
    .25 tsp. black pepper
    .5 chicken breast, cut into 1 in. strips and sauteed in nonstick skillet (season to taste)


prepare all of the ingredients so that they are ready to put together.
Place both stocks in a saucepan and bring to a boil. Add chile pepper, grated ginger, salt, pepper, jullienned carrots, one of the scallions, onion powder, garlic powder, let simmer for about 5 minutes. Add fresh udon noodles and cooked chicken. Let soup simmer for 5 minutes longer.
That's it! Easy and delicious!
