Ingredients

    2 chicken breasts, sliced into strips
    med onion chopped
    1 clove garlic
    2 cans Rotel
    1 C rice
    1 C Cheddar cheese

    Saute garlic and onion in cooking spray, add chicken and cook until done. Add Rotel, 1/2 c water and rice.
    Cook 20 minutes or until done. Cover with cheese.
