Introduction
If you can't find a good gluten free flour, mix:175 g rice flour
75 g potato starch flour

Ingredients

275g Doves plain gluten free flour
2 tsp xylitol (or sugar)
1½ tsp xanthan gum
1 tsp salt
250 ml Warm water
Directions
Mix the dry ingredients together thoroughly. Stir in the water and knead briefly. Roll into a sausage and cut into 8 pieces. Keep warm in a plastic bowl under some cling film.
Roll each wrap out between two sheets of plastic film. Dust with flour to keep from sticking too much to the film.
Cook on a high heat about 1 minute per side in frying pan. Wipe the pan with a little oil, if you wish – with works well enough without the addition of oil.
These can be stored in the freezer stacked between sheets of greaseproof paper. Defrost thoroughly before using and reheat in the microwave for 15 - 25 minutes.

used agar agar flakes, a sub. for xanthan gum. also u.s. measurements. 3/4 c. rice, 1/3 potato, 2 T tapioca. batter was thin-like pancake. no way to roll out. so i fried them like crepes, in oil on a non-stick skillet, which was easier than rolling! a bit salty, but i'll try and modify recipe. - 10/8/10
