Ingredients

2 tsp olive oil
1 onion, sliced thin (I like using Vidalia onion for this)
3 cups zucchini, sliced thin (use more or less depending upon how much you have!)
1 can diced tomatoes, drained (can substitute sliced large summer tomato)
4 TB parmesan cheese, grated or shredded
Mrs. Dash, salt, pepper, garlic or other seasonings to taste
Directions
Preheat oven to 350 degrees.
Saute sliced onion in olive oil until translucent.
Spray 9X13 pan with olive oil or vege spray. Spread tomato pieces or slices over the bottom of the pan. Top with zucchini slices. Sprinkle with Mrs. Dash and/or salt, pepper, granulated garlic. You can vary the seasonings depending upon taste - it's very adaptable.
Top with sauteed onion. Sprinkle 4 TB (1/4 cup) shredded or grated Parmesan cheese.
Bake one hour or until golden brown and tender. Makes 6 generous side servings.
