Introduction
This was the first way my boyfriend ever tried this kind of fish, and he loved it! The seasonings caramelize just perfectly on the fish. Ingredients

2 Tilapia fillets (3 - 4 oz.)
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
oregano, to taste
sugar, about 1/2 tsp
Directions
Drizzle 2 Tablespoons of olive oil into a nonstick skillet. Add the vinegar, garlic powder, salt, and black pepper to the oil and mix it in the pan.
Drag each fillet of fish in the oil on both sides, then set side by side in the pan. Turn the stove on to medium-high heat.
Sprinkle a little oregano to taste and about 1/4 teaspoon sugar on top of each fillet of fish in the pan. This savory dish really gets some depth of flavor from the sugar, so don't skip it.
Loosely cover the pan with a lid to retain heat and help prevent splatters, and cook for about 6 minutes on one side.
Carefully flip the fish over. Let it cook for about 3 more minutes until it has a nice brown crust on both sides, then turn off heat.
Plate and serve with a nice spinach salad or a rice pilaf.
