Introduction

Ingredients

1/2 salmon filet, already cooked
2 eggs
1 small onion, minced
1/3 cup bread crumbs
old bay seasoning
pepper
OPTIONAL-Parmesan cheese
Vegetable Oil-1 tbsp
Directions
Makes 8 cakes
Preheat oven to 375.
Shred left over salmon into small chunks.
Mince onion.
Add bread crumbs, 2 eggs and seasoning to salmon mix.
Mix and shape into 8 patties.
Place in refrigerator for at least 20 minutes.
OPTION*
You can sprinkle outer patty with parmesan cheese for a crispy coating.
Spray baking sheet with cooking oil.
Bake at 375 for 20 minutes.
For extra crispy cakes; add 1 tsp of vegetable oil to frying pan. Brown patty for an additional 5 minutes.
