Ingredients

1/3 c unsalted butter
3 c sliced peaches
1 c raspberries
1 c sucanat
1 c whole wheat flour
2 t baking powder
pinch salt
1 c milk
1 t vanilla
whipped or ice cream
Directions
Heat oven to 350F. Measure butter in 11x8x2.5 casserole dish. Place dish in oven to melt butter.
Combine peaches and raspberries in medium bowl and sprinkle 1T sucanat. Gently stir and set aside.
Whisk flour, baking powder, and salt in separate bowl. Add sucanat, milk, and vanilla. Stir until evenly blended.
Pour melted butter into batter. Stir quickly but gently to mix. Immediately pour batter into casserole dish.
Add fruit with juice, distributing evenly and lightly pressing it part way into batter.
Return dish to oven and bake until top is rich golden brown, approximately 1 hour.
Serve hot or warm with whipped cream or ice cream. Serves 6-8.
