Introduction

A Tuscan seasoning inspired veggie and sweet potato soup A Tuscan seasoning inspired veggie and sweet potato soup
Number of Servings: 26

Ingredients

    2 large sweet potatoes, chopped (about 3c)
    1 15.5 oz. can of garbanzo beans
    8 cups of greens (e. g. Swiss chard), chopped
    1 cup carrots, chopped
    1 medium onion
    2 vegetable bouillon cubes
    1.5 Tbs Tuscan Italian Seasoning
    1 tsp salt
    4 cups water

Directions

Bring water to boil. Dissolve bouillon and add onion, salt and seasoning. Add potatoes and boil 10 minutes. Add carrots and simmer 10 minutes. Add greens and cover. Simmer for another 10 minutes, stirring greens into broth as they wilt. You may need to add more water.

Makes about 6 2.5 cup servings.

    I add red lentils( ½ cup) and cayenne or chili pepper for "kick". I also blend with my immersion blender for a more creamy texture. Very good recipe! - 4/24/10
