Introduction
I was at Trader Joe's and saw these meatless meatballs and thought. Meatball Sub! I made them with a Mexican flavor because I wanted to use salsa and and the Daiya Cheddar "Cheese" I had in my fridge.This recipe looks high in sodium but I always rinse the beans which lowers the sodium content. Ingredients

Trader Joe's Meatless Meatballs (whole Bag) (3 meatballs per serving)
Trader Joe's Melange a Trois Frozen Mixed mixed
peppers and onions 1/2 bag
2 cans Organic Diced Tomatoes
15 oz black beans, 1 serving
Organic Tomato Paste 4 Tablespoons
Dried Oregano, 1 tsp
1 tsp Parsley Flakes, 1 serving
Chili powder, 2 tbsp
Garlic Powder, .5 tsp
Italian Seasoning, 1 tsp
Granulated Sugar, 1 tsp
Daiya Cheddar Cheese (vegan) 1/2 ounce sprinkled on top
of each Sub.
Trader Joe's Whole Wheat Hot Dog Bun, 10 buns
Directions
This recipe makes 8 Sandwiches.
Saute the frozen peppers and onions in a medium pan for about 2 minutes. Add the spices and saute a minute longer. Add the tomatoes, tomato paste and rinsed black beans. and cook on low until everything is heated through and the "meatballs" are hot.
Serve in one of the Whole Wheat Hot Dog Buns with just a touch of the Daiya cheese and your favorite salsa on top.
