Ingredients

    Cauliflower, raw, 1 head, small (4" dia)
    Summer Squash, 1 cup, sliced
    Garlic, 2 cloves
    Garlic powder, 1 tsp
    Garlic Scapes, .25 cup
    Green Peppers (bell peppers), .33 cup, strips
    Oregano, ground, 1 tsp
    Basil, 1 tbsp
    Cheddar or Colby Cheese, Low Fat, .25 cup, shredded
    Pam cooking spray

Directions

1) Toss all ingredients together and roast in 375 degree oven.
Makes 4 1/2 cup servings.
