Introduction
A slightly lighter version of a blueberry scone although it doesn't taste like a lighter version! A slightly lighter version of a blueberry scone although it doesn't taste like a lighter version!Number of Servings: 10
Ingredients

1.5 c all-purpose flour
0.5 c whole wheat flour
0.5 c sugar
1 T baking powder
1 T finely grated orange peel
0.25 t baking soda
0.25 t salt
0.25 c butter
0.67 c milk
1 t lemon juice
1 egg
1 t vanilla extract
1 c blueberries
1 quick spray of Pam
Optional orange glaze (calorie count includes this):
0.5 c powdered sugar
1 oz (or so) of orange juice
Directions
Preheat oven to 400.
Combine lemon juice with milk and stir; set aside for at least 5 minutes.
Combine dry ingredients and cut in butter, until mixture resembles course crumbs. Form a well in the center.
Wisk together egg and vanilla extract with the milk/lemon mixture. Pour all at once into dry ingredients.
Combine until moist. Gently add blueberries.
Pour ingredients out onto lightly floured surface and knead 10 to 12 times. Form into a 7" diameter circle.
Place on lightly oiled baking tray and cut into 10 sections. Space sections about an inch apart. Bake for about 15 min, but check at 12 min.
Meanwhile combine powdered sugar and orange juice until a good glaze consistency forms (may need to add more orange juice or milk).
Once scones are done, remove from tray and drizzle with glaze. Makes 10 delicious scone servings.
