Introduction

These cookies were actually born out of a 'cake' recipe for a pineapple upside down cake - it is the crust. I had a bunch left over and made them into cookies and dehydrated them. They are yummy! Plan ahead - you will need to dehydrate for 4-8 hours depending on how you want them. These cookies were actually born out of a 'cake' recipe for a pineapple upside down cake - it is the crust. Ingredients

    Carrots, raw, 1 cup, chopped
    *Almond meal, 1 cup = 1 cup raw almonds
    *Agave (organic raw blue agave syrup - dark), 1 tbsp
    Water if needed up to 1 cup.

Directions

place all in ingredients into a Food Processor and process until creamy - add a little water if needed for smoothness. Line your dehydrator tray - I like parchment paper best. Drop spoonfuls onto the tray and flatten into rounds. Dehydrate on 105 for 4-8 hours turning about half way to peel off the liner.
