Introduction

Wanted to find something to cook for brunch, didn't have exact ingredients others used, so this is what I came up with and it was great even without any syrup. Suggested to serve with sliced bananas or other fruit on the side. Ingredients

    Dry Ingredients:
    1 1/4 cup of self rising flour
    10 tablespoons of quick cooking oats
    1/3 cup brown sugar
    1/2 teaspoon salt

    Liquid Ingredients:
    1 large egg
    2 tablespoons vegetable oil
    1 cup fat free skim milk
    2 tablespoons lemon juice

Directions

Combine skim milk and lemon juice and set aside for 5 minutes. If prefered this can be skipped and buttermilk can be used but not included in nutritional information.

In a bowl, combine dry ingredients: flour, oats, sugar, and salt.

Add the remaining liquid ingredients to the milk: egg, oil. Mix hand whisk together, then mix liquid into dry ingredients until lumps are gone.

Heat pan over medium heat, coat with non-stick fat free spray. Add 1/3 cup of mix to pan let cook short time until you see bubbles rising throughout then flip until fully cooked.

Using 1/3 cup of mix per pancake will yield about 10 pancakes. Nutrional information is based per pancake, suggest 2-3 pancakes per person.

A nice finish is to garnish sliced bananas on the plate. Take a bite of pancake followed by banana makes a great flavor combination. Fruit is not included in nutritional information.
