Ingredients

1 Barramundi Fillet (150g approx)
0.5 cup White Rice (uncooked measure)
0.5 Tomato, diced
0.5 Onion, sliced
1 tbsp Lemon Juice
Garlic Powder
Other herbs & spices to taste.
Directions
1. Pre-heat oven to 180 degrees Celsius.
2. Line an oven tray with baking paper and place fish fillet on top.
3. Cover fish with tomato & onion.
4. Pour lemon juice over the top.
5. Add garlic powder and any other herbs or spices that you like, to taste.
6. Place tray in oven for 30 minutes, or until fish flakes when tested with a fork.
7. While fish is baking, cook rice according to packet instructions. Drain and set aside.
8. To serve, spread rice on a dinner plate, and top with fish fillet. Juices may be poured over rice for added moisture.
Sometimes I cook these wrapped in foil instead of baked open on the tray. Just as delicious either way, but the foil version collects more juices to pour over the top.
