Introduction

Baked potato salad made after our favorite at Onion Creek! It's rich and an indulgence that is not meant for everyday consumption! Baked potato salad made after our favorite at Onion Creek! It's rich and an indulgence that is not meant for everyday consumption!
Number of Servings: 4

Ingredients

    2 tbs Mayonaise (you can use light)
    2 tbs Garlic and Herb Kraft Mayo
    2 tbs Light or fat free Sour Cream
    1/3 of a cup (or less) 2% cheddar cheese
    2 tbs( or more) Green onion or chives
    2 tbs Bacon Bits (not bacos, real bacon bits, or you could use turkey bacon!)
    2 large Potatos ( I like the yukon golds, w/ the skin)

Directions

"Bake" potatoes in the microwave for about 6 minutes. (cooking time may vary by microwave) Cool off in the freezer or fridge until cold. Cut potatoes into small cubes or slices, however you like your potato salad. Mix all ingredients together, after potatos are already cool, and add to potatos! Salt and pepper to taste. Enjoy!
