Number of Servings: 4

Ingredients

    1 lb thawed medium shrimp, peeled, devained and uncooked
    1 tbsp olive oil
    1 can hunts FIRE ROASTED TOMATO - it doesnt show in search
    1 clove garlic minced
    1/4 c balsalmic vinegar
    2 tbsp brown sugar
    1/2 package frozen spinach thawed
    1 onion diced
    2 cups cooked brown rice

Directions

Add olive oil to pan to heat up, add garlic, onions to saute until tender. Add tomatoes, vinegar, spinach and sugar and stir and cook together 10 minutes. Add shrimp and cook 5-7 minutes until throughly cooked.

Good herbs to add: italian seasoning, parsley
Changing shrimp for chicken is good too

Pour 1/2 c of tomato mixture over 1/2 c rice
