Introduction

Ingredients

2 Green Peppers
Two Turkey Sausage Links
2 Mushrooms
1 Package Curry Rice
Directions
Pre-heat oven to 350'
Cut the tops off the two green peppers and clean out the seeds
Chop two medium mushrooms into fine pieces and set aside
Put the pre packaged rice over too cook (doesn't have to be curry rice, try any rice!)
Whilst the rice is cooking remove the meat from inside the two sausage links, spray a small frying pan with low fat cooking spray and cook on low-to medium heat until the sausage is cooked thoroughly.
When the rice is nearly done add the mushroom pieces during the last 5 minutes to the rice to soften.
Place the peppers in a shallow baking dish and add 1 to 1 1/2 cups water to the bottom of the pan.
Mix the cooked turkey sausage into the rice/mushroom mixture and fill the peppers to heaping.
Place in the oven and cook for 40 minutes.
I serve this with a side of corn and whole wheat/meal dinner rolls -
