Ingredients

2 TBS butter
1 egg
2 TBS almond meal
2 Tbs flaxseed meal
(if no almond meal available, can use 4 TBS flaxseed)
1/2 teas baking powder
1 teas cinnamon
Splenda (to taste - I use about 1 TBS)
Directions
Put butter in a coffee mug. Microwave 30 sec on High. When butter is melted, slosh it around to coat the mug so the muffin won't stick. Add the egg and beat with a fork. Then add the rest of the ingredients. Mix. Microwave on High for ONE MINUTE. Muffin will slide out of the cup!
