Introduction

This recipe can be made with or without raisins. Poppy seeds or sesame seeds can be used to top bread. It can also be made plain, and or a 50/50 blend of white and wheat flour. Ingredients

    Hard Red Winter Wheat, Whole Grain, Organic, 8.5 cup
    Active Dry Yeast, 1.5 tbsp
    Olive Oil, .5 cup
    Egg, fresh, 5 large
    Salt, 1 tbsp
    Demerara Cane Sugar, 1/2 C. plus 1 Tbsp.
    Lukewarm Water, 1 3/4 C.



Directions

In a large bowl dissolve yeast and 1 Tbsp. of sugar in 1 3/4 C. lukewarm water (not hot). Whisk oil into yeast mixture, then beat 4 eggs, one at a time with remaining sugar and salt. Gradually add flour. When dough holds together, it is ready to knead. Turn dough onto a floured surface and knead until smooth. Clean bowl and grease. Place dough in greased bowl, cover with plastic wrap and let rise until double in size for about one hour. Punch dough down, This would be the time to add raisins if you are adding them, cover and let rise again in a warm place for another half-hour.

Form loaves. This recipe makes two loaves. To make a 4 braid Challah, take the dough and section into 4 even parts, roll to equal lengths. Place the 4 strands parallel to one another, pinch ends together, proceed to braid. REPEAT to make the second loaf.

Place braided loaves on parchment paper covered cookie sheet. Beat remaining egg brush over the top of loaves, sprinkle with sesame seeds or poppy seeds, cover with plastic wrap and allow to rise another hour.

Preheat oven to 350. Cook bread for 30-40 minutes or until internal temperature reaches 190 degrees.

Allow to completely cool before cutting.
