Introduction
Little cupcakes made with black beans. Gluten free! I use coconut sugar, found at health food stores, because it has a much lower glycemic index. Little cupcakes made with black beans. Gluten free! Ingredients

1 can black beans, drained and rinsed
1/2 C flax meal
1/4 C almond butter (could also try peanut butter)
2/3 C coconut sugar
1/2 C cocoa powder
10 dates
2 eggs, beaten
1 t vanilla (or more)
1 T instant coffee (optional)
Directions
Put the 10 dates in a food processor and chop them thoroughly. Then add the rest of the ingredients and turn the food processor on until well blended. Batter will be very thick.
Spoon into 24 mini-muffin tins (sprayed with non-stick cooking spray).
Bake at 350 for about 20-25 minutes.
