Ingredients

    1 tablespoon butter (add to rice while cooking)
    1 cup rice (uncooked)
    1 can chicken broth (to cook rice in)

    Cook rice before adding to other ingredients

    3 boneless chicken breast halves, cooked and cubed (or a Rotisserie chicken works well also)
    1 pound jack cheese (3/4 of the pound cubed and 1/4 shredded for the topping)
    1 can corn
    1 (24 oz) green enchilada sauce
    18-24 corn tortillas

Directions

Mix rice, chicken, cubed cheese (save a little cheese for top) and corn with 1/4 cup green enchiladas sauce, spread a little of the enchilada sauce in bottom of pan. Place a little mixture in each tortilla, roll up and place in pan. Cover with remaining sauce. Sprinkle with a remaining shredded cheese and cook for 30 minutes at 350.

For an added kick, add diced jalapenos into the rice mixture.
