Introduction

Based on the Nigella Lawson recipe. Tastes good with other nuts instead of walnuts (dessicated coconut, almonds, pecans, etc) and other dried fruits sultanas, cranberries, apricots, lemon peel, etc). Can also substitute oil for butter.
Try subbing 25g of flour with cocoa powder and add 100g of good dark cooking chocolate to make a chocolate version.

This makes about 1kg of banana bread, so you might want to halve the recipe.
Cupcake size pans make about a 40-50gm portion [aprx 200cal for 50gm so a nice treat] are a good way to go. You will get about 20-24 for a full recipe.
If you don't want alcohol use fruit juice to hydrate the raisins or sultanas.

Ingredients

    Ingredients:
    1 * Rum, 2 double shot [jiggers 1.5 fl oz]
    2 * Sultanas/Raisins, 1 cup

    3 * Flour, white, 2 cup
    4 * Baking Powder, 2 tsp
    5 * Baking Soda, 1 tsp
    6 * Salt, 0.50 tsp

    7 * Butter, unsalted, 125
    8 * Granulated Sugar, 1 cup

    9 * Egg, fresh, 2 medium
    10 * Egg Yolk, 1 large

    11 * Banana, fresh, 2 large
    12 * Walnuts, 0.50 cup, chopped
    13 * Vanilla Essence 1Tb

Directions

Heat 1 in 2 and soak for 1 hr = A
Sift 3 to 6 together = B
Melt 7 to golden-brown, add 8 and sit for 10 min = C
Beat 9 & 10 together = D
Mash 11 and add to 12 & 13 = E

Add A, D & E to C and mix.
Add B to C mixture in thirds, mixing thoroughly as you go.

Put mixture in loaf pan and bake on GM3/170C/340F.
If you bake in cupcake/muffin tins, bake for 40 to 60min.
