Ingredients

6 Boneless Pork Chops
6 Cups Brown Rice
6 Cups Broccoli
1 Jar Desert Trading Company Mango & Peach Salsa
Directions
Put the pork chops in a large bag and pour the salsa over them. Make sure both sides are coated and let chops marinade for 2 hours.
After 2 hours pre-heat the oven to 350 degrees. Put pork chops in a baking dish with the salsa from the bag. Add enough rice that will make 6 cups when cooked around the pork chops. Pour 2 cups of water in the baking dish. Cover with aluminum foil.
Bake for about 1 hour, but check to make sure there is still enough juices to cook the rice about 30 minutes into baking. (I had to add another 2 cups after 30 minutes of baking)
Cook or steam broccoli when there is about 15 minutes left to bake the pork chops and rice.

I thought of mixing peaches and chops this morning and found this recipe. Made a quick salsa from home canned tomato and onion and frozen peaches. Marinated for a few hours and baked without the extras, served with potatoes. Meat was very tender, used salsa on potatoes addedd seasoning. Tasted good - 1/19/09
