Ingredients



    * Zucchini, 3 cup, sliced (remove)
    * RedPack Petite Diced Tomatoes, 2 cup (remove)
    * Celery, raw, .25 cup, diced (remove)
    * yellow onion, .25 cup (remove)
    * Black Olives, canned (small-extra large), 24 small (remove)
    * Olive Oil, .5 tbsp (remove)
    * Salt and pepper to taste

Directions

Slice zucchini 1/8 to 1/4 inch thick. Chop or slice celery and onions. Cut olives in half. Heat olive oil in a skillet. Add onions and celery. Saute over high heat for one minute. Add zucchini, salting each layer. Saute two minutes. Add tomatoes with some of the tomato "juice" liquid from the can. Saute for an additional three minutes. Add olives and saute until the zucchini is just cooked through. Serve immediately as a side dish or over pasta. Makes 4 generous servings.
