Introduction

This is really delicious. Too bad I got a little over-creative and ruined my first batch with some red wine vinegar...don't do it! Leave the recipe as-is and it tastes great! A little high in sodium and cholesterol but also high in potassium and vitamins. The cholesterol is from the seafood, so at least it's the good kind! This is really delicious. Ingredients

    1 pkg Trader Joe's Seafood Blend (shrimp, calamari, scallops)
    1 pkg Trader Joe's Perline Pasta & Prosciutto (you could use any tortellini-type pasta for this)
    1 pkg frozen spinach, thawed
    1 white cheddar flavour pouch from a macaroni & cheese box
    1/4 cup grated Parmesan cheese
    2 cloves garlic, minced
    2 tbsp olive oil
    1 tsp crushed red pepper flakes
    1 tsp oregano
    1 tsp black pepper
    1 pkg Trader Joe's Fat Free Crumbled Feta

Directions

Cook pasta according to directions. Drain and set aside in a large mixing bowl.

Heat olive oil in a pan and add garlic & spices. Once garlic starts to sweat, add spinach. Be careful as the water in the spinach will make the oil spit! Cook through and add seafood blend. Toss together for 2-3 minutes until the seafood is cooked - there should be some residual water in the pan at this point. Add cheese packet and Parmesan cheese and stir to coat.

Once everything is cooked through and coated in the sauce, pour meat and spinach over pasta and toss to coat pasta.

Dish up and top with crumbled feta cheese.
