    For Vinaigrette:
    2 Tbsp red wine vinegar
    1 Tbsp canola (or other) oil
    1 Tbsp honey mustard
    1 tspn minced garlic

    For salad:
    1 Tbsp walnut (or other) oil
    6 oz chicken tenders, halved lengthwise and cut crosswise into strips (or precooked chicken)
    1 tspn lemon pepper
    1 peach cut into thin wedges
    1/2 cup fresh blueberries
    1 ounceof blue cheese (could also use feta cheese)
    1/4 cup of sliced almonds (may toast if desired)

    Whisk together the vinaigrette ingredients in a small bowl. Heat the oil in a large skillet over medium-high heat. Add the checken and sprinkle with lemon pepper. Cook, stirring occasionally , for 5 minutes or until lightly browned and thoroughly cooked. May use a small amount of vinaigrette in pan with chicken. Warm the vinagrette.

    Meanwhile, spread the greens on two plates. Add sliced peaches, blueberries. Top with warm chicken. Drizzle with vinagrette and then top with blue cheese and sliced almonds.
