Introduction

Number of Servings: 2

Ingredients

    Olive oil - Spray bottle without propellant
    2-4 4 oz Lean Pork Chops
    1/4 c Chopped Onion
    1/4 c Chopped Green Pepper
    1/4 c Chopped Red Pepper
    1/4 c Sugar Free Low Calorie Apricot Preserves
    1 tbsp Low Sodium Soy Sauce
    2 tsp Minced Garlic

Directions

Heat non stick skillet over medium heat. Coat pan with olive oil, add pork, cover.

Add peppers, onion.

Mix soy sauce, apricot preserves and garlic. Spoon over pork.

Cook approximately 6 mins on each side. Stir occasionally.

Serve over brown rice.

Yield: 2-4 servings ( serving size 1 pork chop 1 tbsp sauce.

    I thought the taste was very good. We also tried it with orange marmalade, was the only change did not have apricot, but still was good and quick. - 2/1/11
