Introduction

With apologies to the other recipes, this one adds all the ingredients, including brown rice and low fat sour cream. It uses a lower sodium salsa, and substitutes seasonings for taco seasoning. While the amounts called for are approximate for the seasonings--they are included in the calculations as 1 tbsp., however they should be adapted as "to taste." Ingredients

    *Chicken Breast, Schwan Boneless and Skinless, 8 oz
    Razorbacks Hog Salsa (Amigo's Salsa), 1 cup
    *Campbell's Cream of Mushroom Soup Healthy Request, 1.5 cup
    Chili powder, 1 tbsp
    Garlic powder, 1 tbsp
    Pepper, black, 1 tbsp
    Sour Cream, reduced fat, 4 tbsp
    *Rice, Kraft Minute Whole Grain Brown Rice, 2 cups

Directions

Otherwise--place skinless boneless chicken breasts in slow cooker, add the other ingredients except sour cream and rice, and cook until chicken is tender--about 2 hours on high, or 6 hours on low. Divide into 4 parts, and serve over 1/2 cup minute brown rice with 1 tbsp of low fat sour cream. Makes 4 servings.

    Very Good
    Delicious! I skipped the rice and served soft-taco style...those in my household who aren't watching weight/sodium used as a topping for Nachos. Everyone loved the flavor. I will definitely be making this again, so easy! - 11/13/10
